Ingredients:

1/2 cup quinoa
1 cup water
1/2 apple, cored and diced
cinnamon
honey or brown sugar

Instructions:

In a pot, put quinoa and water. Bring to a boil, then reduce heat to a simmer. Cover and simmer for 5 minutes. Add the apple and cinnamon and continue to simmer for about 10 more minutes or until all the liquid has been absorbed. Mix in as much brown sugar as you deem necessary. Enjoy warm.

Almond and Berries Quinoa Mix

Ingredients:

1/2 cup quinoa
1 cup water
1 tbsp almond slivers
1/2 cup mixed berries
honey or brown sugar

Instructions:

In a pot, put quinoa and water. Bring the combination to a boil. reduce to a simmer and simmer while covered for about 10 minutes. Add in the berries. Simmer for 5 more minutes or until all the liquid has been absorbed. Add as much honey or brown sugar that you like. Sprinkle almond slivers before serving for added crunch. Serve warm.

Quinoa Chicken Porridge

Ingredients:

olive oil
1 clove garlic, crushed
1 cup left over cooked chicken
1/2 cup quinoa
1 cup water or chicken broth
salt and pepper
chopped spring onions

Instructions:

In a pot, warm the olive oil. Saute garlic and stir in chicken meat. Stir for about 1 minute, then add the quinoa. Stir for other minute. Add the water or chicken broth. Bring to a boil. reduce heat to a simmer. Cover and simmer for about 15 minutes or until the liquid has been fully absorbed. Add salt and pepper to taste. Top with chopped spring onions and enjoy.

I want my "Baby-Back, Baby-Back, Baby-Back Ribs." This is the dish that Chilli's is famed for. Full rack of ribs "double-basted" with Bbq sauce. Typically served with cinnamon apples and home style fries.

6 pounds of baby back pork ribs
2 cups of water

Sauce

1 cup white vinegar
1/2 cup tomato paste
1 tablespoon of yellow mustard
1/4 cup dark brown sugar
1 teaspoon of liquid hickory flavoring
3 tablespoons of Worcestershire sauce
1 1/4 teaspoons of salt
1/2 teaspoon of onion powder
1/4 teaspoon of garlic powder
1/4 teaspoon of paprika

1. Preheat oven to 350 degrees Fahrenheit.

2. Cut the rib slabs in half, leaving 6-8 ribs per section. In a large roasting pan, dispose the ribs evenly, then add the water. Cover pan tightly with a lid or foil to preclude steam from escaping. Bake for 3 hours.

3. About 2 hours into the baking time, make the sauce. In a large saucepan, couple all the sauce ingredients. Simmer over low heat for 1 hour, stirring occasionally.

4. get ready the coals in a Bbq. Take off the ribs from the roasting pan. Discard the water.

5. Cover the ribs with sauce, saving about 1 1/2 cups of the sauce for later use at the table. Grill the ribs on the Bbq for 5 minutes on each side, or until slightly charred.

6. Serve with the remaining sauce and lots of moist towelettes or paper towels.

How to Make It

Using a large glass serving bowl you will add the prepared ingredients for the oriental chicken salad and the shredded coriander leaves. Toss well to combine. Using a small mixing bowl you will add the light soy, kecap manis and Chinese cooking wine. Mix well and then pour this dressing aggregate over the whole chicken salad and toss once more to blend well.

Garnish with the thinly sliced red chili peppers. Serve immediately to family, friends, or dinner guests.

I have the most astounding childhood memories of my grandmother cooking roast. The smell that wafted straight through the house was synonymous with ease and love. Every time I make a venison pot roast, I think of my grandmother and Sunday supper at her house.

The most astounding thing is that as a child, I conception making pot roast was difficult. Something that smelled that good had to be hard, right? Wrong. Pot roast is a cinch. It's perfect for company, and the leftovers are terrific. Here are the two easiest recipes I've found.

Venison Salt Pot Roast. Mix a 3 to 5 pound bag of common salt with some water so you can mould it. Put a 4 to 6 pound venison roast in a roast dish and cover with the salt. Cook at 200 degrees until the internal temperature is where you like it (it's best served on the rare side). It will cook in about 90 minutes to 2 hours. The salt will form a hard curst colse to the meat. Chisel it away for the most tender roast you've ever had.


Venison Slow Cooker Pot Roast. Place a venison roast in a slow cooker. Surround meat with peeled potatoes, carrots, or other root vegetables. Cover with chicken broth (or venison stock, if you've made it). Cook on low for 4 hours. This is a great method for a gamey roast, or some other less-than-choice meat. This method is also great if you happen to over cook it. The chicken broth will help keep the meat moist. In fact, my husband likes to cook it to the point that the meat just falls apart with a fork.

For either roast, you can add a slight flavor by cutting slits in the meat and inserting whole garlic cloves. Add as many cloves as you like. It's delicious.

Ingredients:

6 to 8 freezing chicken legs*

1 bottle thick barbecue sauce

Preparation:

Put freezing chicken legs in slow cooker. Pour Bbq sauce over them. Cover and cook on High for 6 to 8 hours.

*Note: If beginning with thawed chicken legs, you may remove skin or brown first to cut fat, and cook on Low for 6 to 8 hours.

Coffee cake with apple pie filling, cooked in the slow cooker
Ingredients:

Apple Mixture:

1 can (20 oz) apple pie filling, apple slices broken up somewhat

1/2 teaspoon cinnamon

3 tablespoons brown sugar

Cake Batter:

2 small yellow cake mixes (Jiffy - 9-ounce each)

2 eggs, beaten

1/2 cup sour cream (light)

3 tablespoons softened butter or margarine

1/2 cup evaporated milk

1/2 teaspoon cinnamon

1 teaspoon butter or margarine for greasing slow cooker

Preparation:

Combine ingredients for apple combination in a small bowl. Integrate batter ingredients; mix well. Generouslly butter the sides and lowest of a 3 1/2 quart slow cooker/Crock Pot. Spread about half the apple combination in the lowest of the pot.

Spoon 1/2 the batter over the apple mixture. Spoon the remaining apple combination over the batter, then cover with remaining batter. Cover and cook on high for 2 to 2 1/2 hours. Turn heat off, leave cover ajar slightly, and cool for about 15 minutes. Invert on a plate, retrieving any apples left in the lowest of the pot and placing on top of the cake. Makes a cake about 7 inches in diameter and 3 1/2-inches high.

Fill a sauté pan with about one inch of oil and heat on medium high until hot, but not smoking. Determined lay the crab cakes in the pan for about 4-5 minutes per side, or until they're golden brown. You should only turn the cakes one time. Remove to paper towel to drain and then serve. Add a dip of store bought tartar or cocktail sauce or a packaged hollandaise sauce. Serve with plentifulness of sliced lemon wedges and parsley to decorate the platter.

Shrimp Ceviche in Cucumber Cups

2 English hothouse cucumbers

One half pound shrimp, peeled, deveined, and chopped

4 limes, juiced

1 tbsp. Fresh chopped parsley

3 tbsp. Finely chopped shallot

One fourth cup of chopped red pepper

One fourth cup of finely chopped celery

1 tsp. Course sea salt

Peel cucumbers and cut into one inch thick slices. Try to have about 15-16. Use a melon baller to scoop out the center of the cucumber without puncturing the bottom. Place cucumber cups on a tray until you're ready to fill and serve them.

In a glass bowl, join the shrimp with all ingredients except the crème fraiche. Stir well, fully coating the shrimp with the lime juice. The acid in the juice will nothing else but cook the shrimp as it sits in the refrigerator chilling for up to four hours.

Before serving, drain all of the liquid out and mix in the crème fraiche. If that's not available, you can substitute with sour cream. Place a spoonful of shrimp mixture in each cucumber cup and serve.

Fish Pakora (Indian style)

1 pound filet of white fish (flounder, cod, tilapia), cut into big chunks

Chickpea flour (also called besan or gram)

Half cup finely chopped onion

3 cloves of finely chopped garlic

One fourth tsp. Powdered ginger

1 tsp. Coriander

1 tsp. Garam masala

Chili powder, to taste (optional, depending on level of heat desired)

Salt, to taste

Water, to thicken batter.

Mix all from chickpeas straight through salt together. Gently add water to form a batter the consistency of pancake batter. Dip fish pieces in the batter and deep fry. Remove to paper towel to drain and then serve with riata (yogurt sauce) and warm naan (bread.)

One of easiest ways to get our children to eat wholesome is to get them complicated in the kitchen and the cooking process. It is easier to teach our children about wholesome cooking and eating when the food is right in front of both you and the child. You can discuss the basics of wholesome eating, and get into more complicated discussions as they get older. Having a child curious in what goes on in the kitchen is also an extra set of hands that can help you while you put in order meals. If you can train all your kids to get involved, you'll be able to sit back and relax after a few years!

Here are some simple kids recipes. They're simple in terms of ingredients, and are really easy to do. You will probably have to help out the littler kids, but older ones will be able to do these by themselves just fine!

Fruit Pancakes
These are really easy to do! You can get store bought pancake mix (be sure to check the nutritional facts on the back) and tell your kids to pick their fruits. Blueberries, strawberries, and mangoes are commonly used, but don't be afraid to get creative. It will probably take a few tries before your children will know what a good fruit to batter ratio is, but pretty soon, they'll exquisite the recipe!


Macaroni and Cheese
Put a wholesome spin on this classic. Use whole wheat macaroni instead of quarterly refined pasta. Whole wheat macaroni will take a bit longer to cook, just check on it often or teach your children to check on it and identify when it is al dente or practically cooked. Next, use unsalted butter to grease your baking casserole. Line the casserole with the noodles then sprinkle a kind helping of cheddar, mozzarella, and swiss on top. You can use other kinds of cheese as well. Make it as cheesy as you want! Be sure to put a few bits of butter, salt and pepper before adding the next layer of noodles. Layer cheese over noodles till you run out of noodles then top it off with cheese, bits of butter, salt, pepper, and evenly pour a cup of low fat milk. Bake this in an 375 degree preheated oven for an hour, and you're done!

Super Sandwich
One of the easiest things a child can do, and the possibilities are endless! Canned tuna, cold cuts, and grilled chicken are some of the things children can use to make they sandwiches for you and the family. Encourage them to use leftovers if they can, and always add lettuce, tomato, and cheese. You can never go wrong with these in a sandwich!

Tacos
Store bought, whole wheat taco chips are great for this dish. Fill it with lettuce, chopped tomatoes, chopped onions, cheese, some sour cream, and your option of cooked ground beef or minced chicken. The results are always superb! There are ready to buy taco mixes that you can use to cook your beef or chicken with, if you can teach your kids to spice it up themselves, however, all the good and all the healthier!

Little Pizzas
Use whole wheat tortilla bread. Get the ones that come in smaller circles. Teach your kids to spread some tomato sauce on top, sprinkle with cheese, black olives, artichoke hearts, or whatever other ingredients they may like. This is really fun for kids as they love making their own pizzas. Cook it in the toaster for a few minutes (till the cheese melts) and voila! A wholesome and quick meal!

Get your kids complicated in the kitchen at a young age. These simple kids recipes are a good start to introducing wholesome food to your kids. Below are two of my beloved recipes that are in fact easy to make and yummy to eat. Plus my husband will eat these with me and I do not end up manufacture two dinners or sending him out to get his own dinner. I hope you enjoy.

Recipe 1

Breakfast - Mexican Omelet

4 Eggs

4 Tablespoons number of Rice, Soy or Almond Milk (unsweetened) if desired

1 Diced Avocado

Cotija Cheese

Pico de Gallo - See Below

Pico de Gallo

1 1/2 cups tomatoes seeded and diced

1/4 cup red onion diced

1 tablespoon jalapenos diced

1 tablespoon garlic minced

Juice of 2 limes

2 tablespoons cilantro

Salt and pepper

Directions: concentrate all ingredients for the Pico de Gallo in a bowl and set aside. For omelet concentrate the eggs and rice, soy or almond milk in a bowl. Pour the egg combination into a skillet over medium heat until the town firms up. Using a rubber spatula to loosen the edges from the sides and then tilt the skillet to allow the eggs to run underneath and cook. Fold over the sides of the eggs into town once cooked.

Spoon desired number of Pico de Gallo over top of omelet and then top with Cotija cheese.

Recipe 2

Dinner - Roast Chicken

1 roasting chicken (6 lbs. Or so)

2 tablespoons unsalted butter

1 lemon

3 large garlic cloves sliced

4 sprigs fresh thyme

Salt and freshly ground black pepper

Directions: Let chicken and 1 tablespoon butter come to room temperature. This should take about a half hour. Preheat oven to 425 degrees. Remove the giblets and excess fat from the chicken cavity. Rinse chicken inside and out under cold running water. Dry the chicken thoroughly towels. Tuck the wing tips underneath the body of the chicken. Sprinkle the inside of the chicken liberally with salt and pepper, and set aside.

Roll the lemon on a flat face using firm pressure under your hand to free up the juice inside. Then pierce the lemon liberally with a fork so that the juice can run freely. Cut the garlic cloves into 4 large pieces each. Insert garlic cloves, thyme sprigs, and lemon into cavity. Place chicken in roasting pan. Use about 18 inches of twine to regain the legs..

Spread the softened butter over entire face of chicken, and sprinkle liberally with salt and pepper. Place in the oven, and roast until skin is deep golden brown and crisp and the juices run clear when pierced, this should take about 1 1/2 hours. Be sure to use a meat thermometer to check that it is cooked thoroughly.

Remove chicken from oven, and replacement to a cutting board. Let chicken stand 10 to 15 minutes so the juices settle. Carve and serve.

Garlic ginger marinade is made as follows, the juice of four limes should be mixed with 3 tablespoons of ground ginger, 3 cloves of crushed garlic and one tablespoon of olive oil. Marinade the meat for nearby twenty minutes and use the remainder to baste the meat during cooking.

Chickens can be spiced up using the following ingredients, two ounces of fresh lime juice should be added to three crushed garlic cloves and two finely chopped jalapenos. Season to taste and marinate for about one hour, remembering to baste the meat with the left over mixture.

A beer marinade will add a depth of flavor to a dish and can be prepared using the following, 2 crushed cloves of garlic, a finely chopped onion, eight ounces of beer and three ounces of soy sauce. Parsley can also be added.

Dry Rubs...

Rubs are also perfect for sprucing up chickens and adding extra flavor. As they are not in liquid form like marinades, one should use the juices from the chicken during cooking to prevent meat from becoming to dry. When using this form of flavoring, rub the meat roughly one hour before cooking and leave in the refrigerator. The flavorings will then be absorbed by the meat.

The following ingredients offer much flavor and are ideal for manufacture rubs. Ground mustard, dried rosemary, grated lemon, orange or lime peel, chili powder, cayenne pepper and dried oregano. Ground black pepper and rock or sea salt can also be used.

Summer Has Arrived! Boy do we know it here in Texas! From the weather maps I have seen, I'm sure many of you are also experiencing some pretty hot summer days. And one of the most favorite of summer activities is a picnic. Picnics for lovers, picnics for families, picnics with friends, work picnics, picnics at the beach, etc. Who doesn't love a picnic?

Diabetics enjoy picnics, too, but they often worry that their dietetic needs won't be met. There's nothing like a diabetic arriving at a picnic to seek a meal full of starches and sweets. And, unfortunately, many hosts feel that to meet the diabetics needs, they must have a second menu or extra dishes for the diabetic. Not only can this make the diabetic feel as if they are creating extra work for their hosts, it naturally isn't necessary. If you are planning a picnic, check out this menu below. It is an easy menu that will cater to the diabetics needs and the rest of the crowd won't even know it. Our menu features Southern Fried Chicken, but you could always pick-up carry-out fried chicken if the picnic isn't at your home or you don't want to spend time frying the chicken yourself. Our Blackberry Twist Lemonade is a great summer beverage. But, again, if convenience is a big issue, pick up some diet sodas and ice them down.

So load up the picnic basket and head out for some worry-free fun with our picnic menu of Southern Fried Chicken, No Mayo Bean Salad, Vegetable Tray, Sand Tarts, and Blackberry Twist Lemonade.


Southern Fried Chicken

2 1/2 lb frying chicken, cut-up

1 cup all-purpose flour

1/2 tsp fresh-ground black pepper

1 tsp salt

1/2 tsp paprika

Wash chicken and pat off excess water. Mix remaining ingredients together and place in a zip-top type plastic bag. In a large skillet, put canola oil to about 1/2-inch depth and heat. Place chicken pieces 1 or 2 at a time into bag with flour mixture. Shake to coat well. Shake off excess flour and add chicken to skillet. Cook chicken over medium heat, turning to brown all sides, for 15 to 20 minutes. Sacrifice heat, cover tightly, simmer 30 to 40 minutes or until tender and cooked through. Take off the lid from skillet the last 10 minutes of cooking to allow chicken to brown. Take off from skillet and drain on paper toweling.

No Mayo Bean Salad

2 cans kidney beans, drained

1/2 cup diced onion

3/4 cup pickle relish

3 hard-boiled eggs, diced

2 tbsp cider vinegar

2 tbsp Splenda

In a medium mixing bowl, consolidate all ingredients. Mix well.

Vegetable Tray

Make a pretty presentation of fresh, colorful vegetables. I recommend baby carrots, sliced cucumbers, tomato wedges, fresh broccoli crowns and olives.

Sand Tarts

1 cup butter, softened

1/4 cup Splenda, granulated

2 cups flour

2 tsp vanilla extract

1 cup chopped pecans

2 tbsp Splenda, granulated

2 tsp cornstarch

Preheat oven to 350 degrees. Beat butter and 1/4 cup Splenda granulated at medium speed with galvanic mixer about 2 minutes until creamy. Moderately add flour, beating at low speed until blended. Stir in vanilla and pecans. Shape into 1-inch balls and place onto cookie sheets. Bake 20 minutes; Take off from oven and place on wire racks to cool.

Process 2 tablespoons Splenda granulated and cornstarch in a blender or food processor. Roll cookie balls in mixture.

Blackberry Twist Lemonade

2 cups fresh blackberries or unsweetened frosty blackberries, thawed

1 cup fresh lemon juice

1 cup Granulated Splenda

4 cups cold water

Put berries, lemon juice, and Splenda into blender. Process aggregate until smooth, scraping down sides. Press aggregate through a sieve into a pitcher. Discard solids remaining in the sieve. Stir in water. Serve over ice. Yield: 7 servings with 4 grams sugar each.

1 Chicken (3 1/4 lb)Salt Pepper Yogurt-Curry Dressing

12 Belgian endive leaves

12 Spinach leaves

1/4 c Finely diced seeded tomato

4 Handfuls mixed baby greens

12 sl Papaya

1/4 c Shredded coconut, toasted

2 T Julienned carrot

2 T Julienned zucchini

2 T Julienned deacon sprouts

Season chicken to taste with salt and pepper. Roast at 375'F 1 hour 20 minutes. Cool chicken, remove skin and shred meat (there should be 1 1/4 pounds meat). Place shredded chicken in large bowl. Add Yogurt-Curry Dressing and toss with chicken.

For each serving, arrange 3 Belgian endive leaves and 3 spinach leaves around edge of large plate like flower petals. Place 1 teaspoon diced tomato on each endive leaf. Place handful baby greens in town of plate. arrange chicken on top. Stand 3 papayas upright on 3 sides of chicken. Sprinkle 1 tablespoon coconut on top, then add 1/2 tablespoon julienned carrot, zucchini and daikon sprouts.

Makes 4 main dish servings.

4 ea Breasts, chicken, halves, oiler/fryer, boned, skinned

1 sm Onion, chopped

1/3 c Honey

1/3 c Mustard, spicy

1 tb Curry powder

2 l g Garlic, cloves, minced

In a small bowl, make the sauce by mixing together the onion, honey, mustard, curry, and garlic. Place the chicken, skin side up, in a singular layer in a large shallow baking pan.

Pour sauce over the chicken and bake in a 350 F oven, basting every 15 minutes, for about 1 hour or until the chicken is fork tender.

What could be best than a picnic at the beach for a family dinner outing? Sand in your toes, the roar of the ocean a walk on the beach, and a roaring fire to acquire around. If you aren't lucky adequate to live near the ocean, a lake, pond, creek or fountain will do. Or naturally put blankets down in the back yard. A few easy dinner recipes for a picnic at the beach then later when it gets dark you can do some star gazing.

What you need:

1) A place to go. Choose a local beach, preferably with fire pits or Bbqs. One with a bit of shelter from the wind is ideal. It will keep the sand out of your food later.

2) Fire - a fire ring, Bbq, or generate your own. You can bring a small movable Bbq or dig a pit and line it with stones. If you are production your own fire pit it is great to involve the whole faily in the digging, the hunt for stones and the search for firewood. It is a good idea to bring a grill to set on top of stones on your firepit. And i all the time bring some backup firewood in case the search for wood turns up less than an adequate supply.

It's like at Christmas when all the little kids love to play in the boxes and wrapping; take them to the beach and they love the sand. Of procedure later they'll have it in every crevice, but that's a price well worth paying for a good afternoon at the beach. Beach balls are other good selection as are Frisbees. Bring other pail if you've got a shell collector. They'll spend hours combing the beach for treasures. You can make a game of collecting sea shells and sea glass and have a craft day later where you turn your treasures into a craft such as decorated photo frames.

5) Camera - Since we may be production some decorated photo frames later with our collected shells, we may as well bring the camera and capture some sun and sand logged goofiness on film. I love a shot from the end of the day when everyone ir pink and sandy, tired and happy.

Depending on how many you have with you and what their ages are, there rules may vary, but each child should clearly know either they are allowed in the water, and if so how deep. (To the knees? 7) Drying off - Bring loads of towels, preferably big beach towels. Bring more than you think you'll need because someone all the time gets cold and wet when it is later in the day and starting to get chilly.

9) Sunscreen - I hate to have to cut a great outing short becasue we didn't plan well adequate for sun exposure. Be sure it is water proof, plentiful and it is reapplied as needed.

10) Drinks! Be sure to have plenty of bottles of water on hand and well as fruit drinks for the kids and whatever the adults would like. Why not go with a beach theme and have some mai tais on the beach. They needn't even be alcoholic to taste good, although a little rum add good flaover. Buy mai tai mix, orange juice, mango juice, pineapple juice and rum if desired and go to town. It's extra point if you bring cute glasses (non breakable of course) and super extra prestige for those little umbrellas.

11) Food! I bet you belief we never get there, but you know the food is the highlight of the day. Today we're doing shrimp boil in foil; succulent tender shrimp, sweet summer corn and spicy sausage all grilled together in a foil packet. The are make ahead and kept in the cooler to pop on the fire when we're ready. Also bring a loaf or garlic bread, all buttered and sliced and wrapped in foil to warm on the grill. For appetizers I like to do little smokey sausage links. Give everyone a weiner roasting stick or fashion them yourselves from coat hangers, spear a little smoky sausage and heat over the fire until sizzling. True though, they're hot! Bring more than you think you'll need because appetites get big with all that sun and activity. I'm convinced it makes the food taste best too! For dessert, it's got to be s'mores. Bring marshmallows, roasting sticks, chocolate bars and graham crackers. Again bring more than you think you need to catalogue marshmallows dropped in the sand, burnt like torches and hearty appetites!

Grilled Shrimp "Boil" in Foil

A shrimp boil is a former southern dish where shrimp, shellfish, sausage and corn are boiled together with Old Bay seasoning. This has all the good flavor, but is faster and easier to prepare in foil packets.

Serves 4

1 1/2 lb Shrimp - medium - peeled and deveined
1 lb Mussels
1 lb Clams
1/2 lb Kielbasa, sliced
2 Cobs of of corn, shucked
2 Tb Butter
1/4 C Water
1/4 C White wine
1 Tsp Old Bay seasoning

Instructions

Preheat grill to medium high heat. Cut the corn into 1 inch rounds. Tear off 4 large sheets of foil and fold in half to double. Divide seafood, corn and sausage evenly among the packets, dot with butter, sprinkle on Old Bay, and 1 Tb of both wine and water. Fold up with double folds to acquire well. Grill packets about 10 minutes turning once until puffed. Empty each packet carefully into a bowl to serve.

Take off casserole from the refrigerator, spoon shredded cheddar cheese on to the top of eggs. Plane the cheese gentle on top of egg mixture.

Place casserole in a preheated oven at 375 for 20 - 22 minutes depending on the depth of the casserole dish.
