Next, you will want to add some chopped or cubed seitan (your vegetarian chicken) to the soup along with some salt and pepper. Reduce eat to low, and simmer for 15 minutes or until noodles are soft.

Ground Seitan: Why use ground chicken or ground beef when you can go meatless and use ground seitan instead. Seitan is a good way to prepare a meatless supper if you are just transiting to a vegetarian lifestyle or cooking for meat eaters. Seitan has a similar texture to meat that helps non-vegetarians or new vegetarians adjust to engaging mock meat or meat substitutes. Despite our scary caress at the train hub in Barcelona, we couldn't complain about Catalan cuisine. It was like eating at home, away from home. Let me explain. By virtue of our birth in a previous Spanish colony named the Philippines, we were all customary with Spanish food, tradition, language and Catholic faith. It was our first visit to our previous motherland Spain and we only had one full day.

Naturally, eating paella was on top of our list. Paella is a saffron-flavored Spanish dish with rice, vegetables, meat, chicken or seafood. Secretly, I wanted to taste a paella made in Spain. As expected, the paella was tasty in a peppery way. I guess the Spaniards like it with a lot of peppers - red, green, jalapeno. We all complete a whole paella each, scraped the toasted bottom of the pan, and drank our sangria. What great way to spend the Spanish siesta time but to eat?

Little did we know that we were in for a great treat for dinner. As we strolled along La Rambla, finding at menus of restaurants, who but a Filipino waiter would approach us.


"Filipinos?" he asked with a knowing look.
"Why yes!" The four of us - myself, Joan, Aida and Rachel -were all surprised.
"Dito na kayo kumain," he continued. (Eat your food here.)

So that's how we ended up in Amatxu, a cafeteria along La Rambla. We felt at home at Amatxu, because the manager, cooks, and waiters who served us were mostly Filipinos! For tapas or appetizers, we had pan con tomate (which is crusty bread brushed with olive oil, garlic and tomato), puntillitas (battered and fried baby squid), calamares and vegetable salad. For some reason, the pan con tomate and puntillitas never made it to Philippine shores which is a pity.

For our main course, I had paella again, this time with chorizos (Spanish sausages). It was spellbinding to note that since the cook was a Filipino, it did taste like a paella made in Manila - not hot with peppers, but a small wet on the sauce and with generous toppings. For the first time, I ate a fresh Spanish chorizo which was not smoked nor red in color. I can't conclude which paella version is better, because both tasted tasty in its own way. For our dessert, it was the Spanish flan called Creme Catalan, vanilla custard with caramel sauce. It's sweet and light, it must be the fresh cream or milk they used. A exquisite ending to a delicious, full meal.

As recommended, we visited Moka Cafe (along La Rambla) the next day for breakfast. Thanks to Rachel, our food enthusiast, we got to try churros con chocolate made in Spain. Along with tapas like calamare, Iberian ham and cheese, we feasted on Spanish churros dipped in thick Spanish chocolate. Superb! The Spaniards cook their churros to a crisp, clean pastry, devoid of any dusting of sugar or cinnamon. The hidden lies in the thick, rich, dark, Spanish chocolate. When you dip the churros in the hot chocolate, the combination is exquisite - rich, dark Chocolately taste. No wonder the Spaniards drink chocolate morning, noon and evenings! I also got to try something called tarta de patatas (potato tart) which I confused with torta de patatas, which is a Spanish omelette filled with fresh potatoes. Nevertheless, the tarta de patatas was creamy and filling. I learned the Spaniards also topped tarta de patatas with melted Spanish chocolate. Ay, deliciosos!

Given the demanding and fast paced lifestyle that many of us lead, it can be quite difficult to set aside time to put in order and eat a healthy and faultless breakfast.

For any breakfast method to be victorious at all, it has to satisfy a whole of standards. It has to be quick to prepare, delicious, nutritious and filling. Did I say quick to prepare?

Ingredients:

1/2 cup quinoa
1 cup water
1/2 apple, cored and diced
cinnamon
honey or brown sugar

Instructions:

In a pot, put quinoa and water. Bring to a boil, then reduce heat to a simmer. Cover and simmer for 5 minutes. Add the apple and cinnamon and continue to simmer for about 10 more minutes or until all the liquid has been absorbed. Mix in as much brown sugar as you deem necessary. Enjoy warm.

Almond and Berries Quinoa Mix

Ingredients:

1/2 cup quinoa
1 cup water
1 tbsp almond slivers
1/2 cup mixed berries
honey or brown sugar

Instructions:

In a pot, put quinoa and water. Bring the combination to a boil. reduce to a simmer and simmer while covered for about 10 minutes. Add in the berries. Simmer for 5 more minutes or until all the liquid has been absorbed. Add as much honey or brown sugar that you like. Sprinkle almond slivers before serving for added crunch. Serve warm.

Quinoa Chicken Porridge

Ingredients:

olive oil
1 clove garlic, crushed
1 cup left over cooked chicken
1/2 cup quinoa
1 cup water or chicken broth
salt and pepper
chopped spring onions

Instructions:

In a pot, warm the olive oil. Saute garlic and stir in chicken meat. Stir for about 1 minute, then add the quinoa. Stir for other minute. Add the water or chicken broth. Bring to a boil. reduce heat to a simmer. Cover and simmer for about 15 minutes or until the liquid has been fully absorbed. Add salt and pepper to taste. Top with chopped spring onions and enjoy.

I want my "Baby-Back, Baby-Back, Baby-Back Ribs." This is the dish that Chilli's is famed for. Full rack of ribs "double-basted" with Bbq sauce. Typically served with cinnamon apples and home style fries.

6 pounds of baby back pork ribs
2 cups of water

Sauce

1 cup white vinegar
1/2 cup tomato paste
1 tablespoon of yellow mustard
1/4 cup dark brown sugar
1 teaspoon of liquid hickory flavoring
3 tablespoons of Worcestershire sauce
1 1/4 teaspoons of salt
1/2 teaspoon of onion powder
1/4 teaspoon of garlic powder
1/4 teaspoon of paprika

1. Preheat oven to 350 degrees Fahrenheit.

2. Cut the rib slabs in half, leaving 6-8 ribs per section. In a large roasting pan, dispose the ribs evenly, then add the water. Cover pan tightly with a lid or foil to preclude steam from escaping. Bake for 3 hours.

3. About 2 hours into the baking time, make the sauce. In a large saucepan, couple all the sauce ingredients. Simmer over low heat for 1 hour, stirring occasionally.

4. get ready the coals in a Bbq. Take off the ribs from the roasting pan. Discard the water.

5. Cover the ribs with sauce, saving about 1 1/2 cups of the sauce for later use at the table. Grill the ribs on the Bbq for 5 minutes on each side, or until slightly charred.

St. Louis style has been trimmed with the brisket and skirt already removed. Typically, it is more cost effective to buy spares untrimmed and trim them yourself.

The skirt and brisket (often called rib tips) are excellent for smoking and make a great snack while waiting for the whole racks to cook. A typical butcher shop or grocery store tends to charge more money for St. Louis style, yet you are legitimately getting less meat.

To take off the skirt, hold it up perpendicular to the cutting board and lay your knife on the bone of the rib and gently cut flush with the rack until the skirt has been cut out completely. Save this piece for some rub and throw it on the smoker with the rest of the meat.

The next step is the most difficult step to perform. Many cooks will cook the whole rack with the brisket and skirt attached, but most prefer to cook the ribs St. Louis style. Cooking an untrimmed rack can cause issues with cook times where the brisket quantum requires more time to cook than the ribs themselves which can supervene in overcooked ribs to discontinue the brisket. You can run your fingers along the brisket and feel where the ends of the ribs attach to the brisket. Cut right along that line with a sharp knife to separate the ribs from the brisket. Once this step is completed, the spare ribs now look similar to a rack of baby backs.

After cooking the chicken, strain the chicken broth and return to the pan. After cooling the chicken, reheat the chicken broth and then add the egg noodles and cook for about 2 to 3 minutes. remove egg noodles from broth and rinse with cold water. Drain thoroughly.

Using a large glass serving bowl you will add the prepared ingredients for the oriental chicken salad and the shredded coriander leaves. Toss well to combine. Using a small mixing bowl you will add the light soy, kecap manis and Chinese cooking wine. Mix well and then pour this dressing aggregate over the whole chicken salad and toss once more to blend well.

Garnish with the thinly sliced red chili peppers. Serve immediately to family, friends, or dinner guests.

I am one of seven children in my family. My mom will be cooking all day today. There will be pan fried chicken, potato salad, baked beans, corn on the cob or green beans depending on what is in season and of procedure oatmeal cookies or raisin spice cake. You see it is 1979 and my youngest brother is coming home on leave from the Navy and we will be going to Mom and Dad's house for dinner and cards tonight. One table for pinochle, one for continental rummy, and one for poker (penny ante, nickel limit.) Texas hold'em hasn't been recognized as an in home game yet.

We have been straight through this before when the oldest brother was in the Navy ten years prior.


Mom's whole existence is about feeding all of us. The five of us girls and the two sister-in-laws still use many of her recipes, especially the one's for holiday goodies. When we were all still at home she would fry chicken in the original cast iron skillet with lots of lard or Crisco. As recipes and tastes and times changed she decided to oven fry her chicken. Of procedure by 1979 the family was getting larger too. Each of us got married an started families of our own. The problem was she only used one recipe. It was Parmesan oven fried chicken at every get together. With my super sized family that was about 35 times in a year if not more if there was a new baby to fawn over.

By the time the seventh child is out of the house in 1979, we decided Mom would need to let go of some of the work and make these occasions potluck. Mom decided we could only bring the side dishes each of us were good at making. Okay, here it goes. Sandra brings the rolls, Sherri brings the fruit salad, Suesan, brings a green salad, Gail brings a carrot cake, Vickie brings apple pie and we let Shelly bring a vegetable tray or chips (We don't allow her to cook, it could get ugly). Still... Mom will make her usual oven fried chicken, potato salad ( she puts zucchini relish in it, yum!), baked beans, a vegetable and Greg and Sonny's favorite raisin spice cake. She just couldn't give it up. What if one of us forgot to bring something?

Can you fantasize what Thanksgiving is like? It's four days of the same thing, but of procedure the menu is the only thing that changes.

Here is my mom's oven fried chicken recipe:

Oven Fried Parmesan Chicken

One c. Flour
2 t. Salt
2 t. Paprika
¼ t. Pepper
2 eggs
3 T. Milk
1/3 c. Dry bread crumbs
6 to 8 pieces of chicken

In a shallow bowl, consolidate flour, salt, paprika and pepper. In other shallow bowl, beat eggs and milk. In a third bowl, consolidate cheese and bread crumbs. Coat chicken pieces with flour mixture, dip in egg mixture, then roll in crumb mixture.

Place in well greased baking pan and bake for 50 min at 350 degrees.

I know that practically everyone has had potato pancakes but did you ever try zucchini pancakes? When I was a child I was a very picky eater and there was very microscopic things that I would eat; my popular was potato pancakes. I just loved them so much I could eat them every day, so one day I came home from school and my mum had potato pancakes or so I thought. I sat down to supper and began eating my popular food but something seemed a microscopic strange. I said to my mother, "these pancakes taste different" and she said "I used a dissimilar kind of potato this time" and so I was satisfied with her explanation and kept on eating my fill as usual. When supper was over she asked me how I liked supper and I said it was spectacular, as usual, then she replied these were a new zucchini pancake recipe that she just got from a neighbor and decided to try it on me. I was never so surprised in my life and since then I have been manufacture the same zucchini pancake recipe and now I am passing it on to you.

1-3 pound zucchini
½ to ¾ cup flour
1 large egg
½ tsp. Salt
Pinch of pepper or as you like it
Some graded onion (optional)

Wash and peal the skin from the zucchini, slice it down the center, remove the seeds from the center and shred the zucchini into a large bowl and add one egg, salt, pepper, and flour. Mix all the ingredients together.


In a large skillet place about a ¼ inch of oil or even a microscopic less (as you prefer) on your range until hot enough to fry in, place the pancake batter in the frying pan a concentrate of spoons at a time until you reach the desired size of each zucchini pancake, let fry until a golden brown on each side is reached and the pancake is crispy colse to the edges, remove the pancakes from the pan and place them on some paper towels to drain the oil from them and then enjoy.

I have the most astounding childhood memories of my grandmother cooking roast. The smell that wafted straight through the house was synonymous with ease and love. Every time I make a venison pot roast, I think of my grandmother and Sunday supper at her house.

The most astounding thing is that as a child, I conception making pot roast was difficult. Something that smelled that good had to be hard, right? Wrong. Pot roast is a cinch. It's perfect for company, and the leftovers are terrific. Here are the two easiest recipes I've found.

Venison Salt Pot Roast. Mix a 3 to 5 pound bag of common salt with some water so you can mould it. Put a 4 to 6 pound venison roast in a roast dish and cover with the salt. Cook at 200 degrees until the internal temperature is where you like it (it's best served on the rare side). It will cook in about 90 minutes to 2 hours. The salt will form a hard curst colse to the meat. Chisel it away for the most tender roast you've ever had.


Venison Slow Cooker Pot Roast. Place a venison roast in a slow cooker. Surround meat with peeled potatoes, carrots, or other root vegetables. Cover with chicken broth (or venison stock, if you've made it). Cook on low for 4 hours. This is a great method for a gamey roast, or some other less-than-choice meat. This method is also great if you happen to over cook it. The chicken broth will help keep the meat moist. In fact, my husband likes to cook it to the point that the meat just falls apart with a fork.

For either roast, you can add a slight flavor by cutting slits in the meat and inserting whole garlic cloves. Add as many cloves as you like. It's delicious.

I had a dream last night where I was planning our dinner for the night. First off, it was sad that I was dreaming about planning dinner. Secondly, in my dream, my child was small again and to my surprise was request for hummus. What is hummus? It spurred me to do a puny research on the field and it all started with a easy definition.

After "Googling" the word hummus (also spelled houmous, hommus, or humus), I have found that hummus is a dip made up mostly of sesame seed paste and chickpea paste. Base flavoring additives include lemon juice, paprika, garlic and olive oil. Mostly a suitable food in the Middle East, hummus' popularity is speedily spreading throughout the world.

Ingredients:

4-6 chicken breasts (pounded out thin)

4-6 pieces of ham

4-6 slices of Swiss or mozzarella cheese

1 can cream of mushroom soup (can use any cream soup)

1/4 cup milk

Preparation:

Put ham and cheese on chicken. Roll up and fetch with a toothpick. Place chicken in the slow cooker/Crock Pot so it looks like a triangle /_\ Layer the rest on top. Mix soup with the milk; pour over top of chicken.

Cover and cook on low for 4 hours or until chicken is no longer pink. Serve over noodles with the sauce it makes.

Bbq Chicken

Ingredients:

6 to 8 freezing chicken legs*

1 bottle thick barbecue sauce

Preparation:

Put freezing chicken legs in slow cooker. Pour Bbq sauce over them. Cover and cook on High for 6 to 8 hours.

*Note: If beginning with thawed chicken legs, you may remove skin or brown first to cut fat, and cook on Low for 6 to 8 hours.

Ingredients:

Apple Mixture:

1 can (20 oz) apple pie filling, apple slices broken up somewhat

1/2 teaspoon cinnamon

3 tablespoons brown sugar

Cake Batter:

2 small yellow cake mixes (Jiffy - 9-ounce each)

2 eggs, beaten

1/2 cup sour cream (light)

3 tablespoons softened butter or margarine

1/2 cup evaporated milk

1/2 teaspoon cinnamon

1 teaspoon butter or margarine for greasing slow cooker

Preparation:

Combine ingredients for apple combination in a small bowl. Integrate batter ingredients; mix well. Generouslly butter the sides and lowest of a 3 1/2 quart slow cooker/Crock Pot. Spread about half the apple combination in the lowest of the pot.

Spoon 1/2 the batter over the apple mixture. Spoon the remaining apple combination over the batter, then cover with remaining batter. Cover and cook on high for 2 to 2 1/2 hours. Turn heat off, leave cover ajar slightly, and cool for about 15 minutes. Invert on a plate, retrieving any apples left in the lowest of the pot and placing on top of the cake. Makes a cake about 7 inches in diameter and 3 1/2-inches high.

Makes you wonder if they loved the biscuit more than the chicken. Oh and the extra crispy gets a big thumbs up.

Finally, coming in at estimate 1 was macaroni and cheese. Again, don't try making this at home. This has to be, practically unanimously, Kraft Mac And Cheese. And of policy no mac and cheese dish is unblemished without pouring ketchup all over it. By the time they are done with the ketchup you can just about see the mac and cheese.

And there you have it. The top 5 popular foods of children. So if you're having issue getting your kid to eat, you might want to start with these. Form the mini cakes (about the size of a half dollar) in your hand and set on cookie sheet. When all of the mini crab cakes are formed, put the tray in the refrigerator for 1-24 hours, covered.

Fill a sauté pan with about one inch of oil and heat on medium high until hot, but not smoking. Determined lay the crab cakes in the pan for about 4-5 minutes per side, or until they're golden brown. You should only turn the cakes one time. Remove to paper towel to drain and then serve. Add a dip of store bought tartar or cocktail sauce or a packaged hollandaise sauce. Serve with plentifulness of sliced lemon wedges and parsley to decorate the platter.

Shrimp Ceviche in Cucumber Cups

2 English hothouse cucumbers

One half pound shrimp, peeled, deveined, and chopped

4 limes, juiced

1 tbsp. Fresh chopped parsley

1 tbsp. Fresh chopped chives

3 tbsp. Finely chopped shallot

One fourth cup of chopped red pepper

One fourth cup of finely chopped celery

1 tsp. Course sea salt

One fourth tsp. Pepper

Cayenne pepper, to taste (optional)

2 tbsp. Crème fraiche

Peel cucumbers and cut into one inch thick slices. Try to have about 15-16. Use a melon baller to scoop out the center of the cucumber without puncturing the bottom. Place cucumber cups on a tray until you're ready to fill and serve them.

In a glass bowl, join the shrimp with all ingredients except the crème fraiche. Stir well, fully coating the shrimp with the lime juice. The acid in the juice will nothing else but cook the shrimp as it sits in the refrigerator chilling for up to four hours.

Before serving, drain all of the liquid out and mix in the crème fraiche. If that's not available, you can substitute with sour cream. Place a spoonful of shrimp mixture in each cucumber cup and serve.

Fish Pakora (Indian style)

1 pound filet of white fish (flounder, cod, tilapia), cut into big chunks

Chickpea flour (also called besan or gram)

Half cup finely chopped onion

3 cloves of finely chopped garlic

One fourth tsp. Powdered ginger

1 tsp. Coriander

1 tsp. Garam masala

Chili powder, to taste (optional, depending on level of heat desired)

Salt, to taste

Water, to thicken batter.

Mix all from chickpeas straight through salt together. Gently add water to form a batter the consistency of pancake batter. Dip fish pieces in the batter and deep fry. Remove to paper towel to drain and then serve with riata (yogurt sauce) and warm naan (bread.)

Chicken fillets are one of the tenderest and most versatile parts of the chicken. The fillet is found at the rear of the breast and falls away easily.

I created this method quite a few years ago and it has been an absolute god send because it has proved itself to be a real popular among kids of all ages. And I do mean "all ages".

This method is absolutely worth a try because it is absolutely easy to prepare and you will be surprised just how speedily it disappears on any buffet.


Ingredients:

1 Kg. Of chicken fillet

The Batter:

Flour

1/2 cup of corn Starch

3 Eggs

1/2 cup of lemon Juice

2 heaped teaspoons of mustard

1 level teaspoon of tumeric

1 level teaspoon of paprika

1 level teaspoon of salt

1/4 teaspoon of white pepper

2 cups of water

Mix all the batter ingredients together in a mixing bowl leaving the flour until last. Beat quicly until the composition is airy. Add flour until the composition is quite thick.

Pour the composition over the chicken fillets and mix well. Heat a frying pan with oil or lard to a temperature of 150 degrees celcius.

Add fillets to the oil one or two at a time until the bottom of the pan is more or less covered. Fry until the fillets are deep golden brown and repeat this carrying out until all of the chicken fillets are fried.

Serve on a bed of lettuce or baby salad leaves and a wedge of lemon. Goes well with french fries, and your popular sauce, salsa or dip.
