Ingredients:

4 slices of fresh bread - white, brown rye or pumpernickel,
1 tbsp butter,

2 parsley sprigs, roughly 1 tsp of savory topping to serve on each canapé, such as:

Cheese spreads, tasty or fancy

Salmon, sardines, crayfish, anchovies, prawns, anchovy paste, crab, oysters, caviar, tuna

Ham, ham paste, pate, continental sausage, chicken

Hardboiled and salted or hardboiled and sieved

Vegetables - cooked or pickled

Asparagus tips, carrots, olives, cauliflower, mushrooms, onions, gherkins, peppers

Method:

Cut bread using a shaped cutter. Spread each round with butter. Place small amounts of food on each and decorate. Serve and adornment with parsley sprigs. Bon Appetit!

One of easiest ways to get our children to eat wholesome is to get them complicated in the kitchen and the cooking process. It is easier to teach our children about wholesome cooking and eating when the food is right in front of both you and the child. You can discuss the basics of wholesome eating, and get into more complicated discussions as they get older. Having a child curious in what goes on in the kitchen is also an extra set of hands that can help you while you put in order meals. If you can train all your kids to get involved, you'll be able to sit back and relax after a few years!

Here are some simple kids recipes. They're simple in terms of ingredients, and are really easy to do. You will probably have to help out the littler kids, but older ones will be able to do these by themselves just fine!

Fruit Pancakes
These are really easy to do! You can get store bought pancake mix (be sure to check the nutritional facts on the back) and tell your kids to pick their fruits. Blueberries, strawberries, and mangoes are commonly used, but don't be afraid to get creative. It will probably take a few tries before your children will know what a good fruit to batter ratio is, but pretty soon, they'll exquisite the recipe!


Macaroni and Cheese
Put a wholesome spin on this classic. Use whole wheat macaroni instead of quarterly refined pasta. Whole wheat macaroni will take a bit longer to cook, just check on it often or teach your children to check on it and identify when it is al dente or practically cooked. Next, use unsalted butter to grease your baking casserole. Line the casserole with the noodles then sprinkle a kind helping of cheddar, mozzarella, and swiss on top. You can use other kinds of cheese as well. Make it as cheesy as you want! Be sure to put a few bits of butter, salt and pepper before adding the next layer of noodles. Layer cheese over noodles till you run out of noodles then top it off with cheese, bits of butter, salt, pepper, and evenly pour a cup of low fat milk. Bake this in an 375 degree preheated oven for an hour, and you're done!

Super Sandwich
One of the easiest things a child can do, and the possibilities are endless! Canned tuna, cold cuts, and grilled chicken are some of the things children can use to make they sandwiches for you and the family. Encourage them to use leftovers if they can, and always add lettuce, tomato, and cheese. You can never go wrong with these in a sandwich!

Tacos
Store bought, whole wheat taco chips are great for this dish. Fill it with lettuce, chopped tomatoes, chopped onions, cheese, some sour cream, and your option of cooked ground beef or minced chicken. The results are always superb! There are ready to buy taco mixes that you can use to cook your beef or chicken with, if you can teach your kids to spice it up themselves, however, all the good and all the healthier!

Little Pizzas
Use whole wheat tortilla bread. Get the ones that come in smaller circles. Teach your kids to spread some tomato sauce on top, sprinkle with cheese, black olives, artichoke hearts, or whatever other ingredients they may like. This is really fun for kids as they love making their own pizzas. Cook it in the toaster for a few minutes (till the cheese melts) and voila! A wholesome and quick meal!

Get your kids complicated in the kitchen at a young age. These simple kids recipes are a good start to introducing wholesome food to your kids. Serving sandwich appetizers and finger foods is an easy, favorable way to present food at any gathering. Practically any sandwich can be made into a finger sandwich, but there are a few dependable standbys that most every person enjoys. Making a large quantity of dinky sandwiches can be simplified with permissible planning.

Cutting vegetables ahead of time will also aid in the assembly or table layout process. With permissible establishment and the right choices in sandwiches, the food at the conference is sure to be a great success.

A few short years ago child obesity was a rare thing but today it is all too coarse nearby the world and especially in the United States, which now has one of the top rates of child obesity of any country in the world. There are of many reasons for this problem, but here are the three main causes:

1. A lack of exercise. When I think back to my own childhood it was coarse for kids to spend most of their free time out of the house running nearby all over the neighborhood with their friend on their bikes or skateboards or playing games like basketball and football. We rarely spent any time sitting nearby at home and it was a case of getting home from school, dropping off your schoolbag, grabbing a quick glass of milk and possibly a cookie and then heading out to play.

Today however we have seen two major changes when it comes to the level of action of our children. The first is that we have come to be very protective of our children and restrict where they can go to keep them away from danger and what they can do to preclude them from getting hurt. When I was a kid my mom used to send me off to school with a wholesome packed lunch of possibly a sandwich on whole wheat bread and an apple or orange, but today kids are given money to buy lunch in the school restaurant and more often than not pick something like pizza and french fries.

Junk food may be convenient, and surely tastes good to a kid, but it is invariably greasy, high in salt and very high in sugar and it adds up to a lot of fat very quickly. Vending machine are anywhere today selling chocolate bars and bags of chips and, possibly worst of all, high sugar soft drinks (which make up as much as twenty five percent of the daily calorie intake for many young adults today) and also available at every turn.

3. Busy parents. We all lead busy lives these days and that often means that the institution of sitting down as a house for a wholesome morning meal before beginning the day and for a home cooked meal in the evening has all but disappeared in many households. Indeed, in a lot of cases, parents no longer know how to cook whatever other than scrambled eggs and so it is often a case of picking up evening meal on the way home from work or ordering in. And what do you pick up or order in? You guessed it, pizza, hamburgers, fried chicken or some other high fat, high salt, high sugar junk meal.

But the question goes even additional than this of procedure because not only are we no longer cooking wholesome meals for our kids, but we are also not taking the time to educate them about food choices or to supervise what they are eating. We send them out in the morning with money in their pocket to buy food during the day but leave it entirely up to them to determine what they spend their money on.

The question of child obesity is already at epidemic proportions and is getting worse by the day but the real question is that we as parents are often causing the problem, or at least doing tiny if whatever to solve it. It doesn't take a genius to find the write back to the question of child obesity and it is time that more parents started taking more accountability for the upbringing of their kids.

We all have our favorite ways of finding small recovery in our budgets, reusing or redoing things is one of mine.

I save the inner packaging from cereal boxes. I've used them as substitutes for plastic bags on occasion, but my favorite use is for pounding chicken cutlets. These bags are sturdy adequate that I don't break straight through the bag, and all the raw chicken juices are contained instead of being spread straight through the kitchen.

As I live alone, I also divide my meats into personal servings, then I store those portions in my freezer. Each meat serving is wrapped, labeled,, then placed into a waxed insert for extra protection against freezer burn, until I need it. A clothes pin can be used as a way of keeping the inserts closed. I use one for beef, one for chicken and someone else one for pork. That way I do not have to look straight through all the meat trying to find the chicken I need for a dinner recipe.


I also use them for keeping my socks, undies and jewelry together when packing for a trip. I take a concentrate of different size empty ones in my suit case when traveling, in the likelihood I get something wet and do not want it up against my clean clothes. I plainly place it in the waxed insert, fold down the top, keeping the top in place with a piece of tape or a large rubber band.

I set a cereal box insert near my sink to place wet garbage into before placing it into my garbage can. It keeps flies and small animals from trying to get into the container.

The inserts can also be used as a means of transporting your leftover food items to your compost pile.

I save all sizes of these inserts and have come up with many ways to reuse them. They are durable, can be washed out and used several times before you have to discard them. Once you get into the habit of recovery and using these inserts it will be hard to do without them.

1st Camping supper Makes or Breaks the Camping Trip


The two most important meals when you go camping are the first meal and the last meal. A ragingly tasty first camping supper puts everybody in a great mood for the rest of the stay. A memorable last meal makes everybody forget the burnt chicken or cold chilli a few days before.

But who has the stamina to cook up a Martha Stewart rendition after unpacking the camping gear and putting up the tent? Here is my 10-minute scrumptious camping supper recipe. I put in order this amazingly easy beef stew at home, then I refrigerate it and take it to camp in the cooler. If it's a long trip, I freeze it and it helps keep the rest of the stuff in the cooler cold. Don't you just love recipes where you just toss all things in the pot?

1st Camping supper - Beef Stew


- 3 lbs of stew beef - cut into 1 inch cubes

- 1 large onion, diced

- 4 tomatoes - cut into wedges

- 1/2 lb of baby carrots

- 1 red pepper - slice into 1/2 inch strips

- 1 lb of small mushrooms

- 2 small turnips - cut into small chunks

- 2 tbs of instant tapioca

- 1/2 cup dry bread crumbs

- 2 cups red wine

- 1 teaspoon of salt

- 1/2 tsp of black pepper

- 1/2 lb of icy small pearl onions (put this in last)

Put all the ingredients except the icy pearl onions in a Dutch oven with a tight-fitting lid.

Bake in a preheated 325 degree oven for 3 1/2 hours.

Do not peek! Otherwise, what's the point of a tight-fitting lid?

Add the pearl onions after the stew is removed from the oven.

Recipe 1

Breakfast - Mexican Omelet

4 Eggs

4 Tablespoons number of Rice, Soy or Almond Milk (unsweetened) if desired

1 Diced Avocado

Cotija Cheese

Pico de Gallo - See Below

Pico de Gallo

1 1/2 cups tomatoes seeded and diced

1/4 cup red onion diced

1 tablespoon jalapenos diced

1 tablespoon garlic minced

Juice of 2 limes

2 tablespoons cilantro

Salt and pepper

Directions: concentrate all ingredients for the Pico de Gallo in a bowl and set aside. For omelet concentrate the eggs and rice, soy or almond milk in a bowl. Pour the egg combination into a skillet over medium heat until the town firms up. Using a rubber spatula to loosen the edges from the sides and then tilt the skillet to allow the eggs to run underneath and cook. Fold over the sides of the eggs into town once cooked.

Spoon desired number of Pico de Gallo over top of omelet and then top with Cotija cheese.

Recipe 2

Dinner - Roast Chicken

1 roasting chicken (6 lbs. Or so)

2 tablespoons unsalted butter

1 lemon

3 large garlic cloves sliced

4 sprigs fresh thyme

Salt and freshly ground black pepper

Directions: Let chicken and 1 tablespoon butter come to room temperature. This should take about a half hour. Preheat oven to 425 degrees. Remove the giblets and excess fat from the chicken cavity. Rinse chicken inside and out under cold running water. Dry the chicken thoroughly towels. Tuck the wing tips underneath the body of the chicken. Sprinkle the inside of the chicken liberally with salt and pepper, and set aside.

Roll the lemon on a flat face using firm pressure under your hand to free up the juice inside. Then pierce the lemon liberally with a fork so that the juice can run freely. Cut the garlic cloves into 4 large pieces each. Insert garlic cloves, thyme sprigs, and lemon into cavity. Place chicken in roasting pan. Use about 18 inches of twine to regain the legs..

Spread the softened butter over entire face of chicken, and sprinkle liberally with salt and pepper. Place in the oven, and roast until skin is deep golden brown and crisp and the juices run clear when pierced, this should take about 1 1/2 hours. Be sure to use a meat thermometer to check that it is cooked thoroughly.

Remove chicken from oven, and replacement to a cutting board. Let chicken stand 10 to 15 minutes so the juices settle. Carve and serve.

Chickens can be spiced up using the following ingredients, two ounces of fresh lime juice should be added to three crushed garlic cloves and two finely chopped jalapenos. Season to taste and marinate for about one hour, remembering to baste the meat with the left over mixture.

A beer marinade will add a depth of flavor to a dish and can be prepared using the following, 2 crushed cloves of garlic, a finely chopped onion, eight ounces of beer and three ounces of soy sauce. Parsley can also be added.

Dry Rubs...

Rubs are also perfect for sprucing up chickens and adding extra flavor. As they are not in liquid form like marinades, one should use the juices from the chicken during cooking to prevent meat from becoming to dry. When using this form of flavoring, rub the meat roughly one hour before cooking and leave in the refrigerator. The flavorings will then be absorbed by the meat.

The following ingredients offer much flavor and are ideal for manufacture rubs. Ground mustard, dried rosemary, grated lemon, orange or lime peel, chili powder, cayenne pepper and dried oregano. Ground black pepper and rock or sea salt can also be used.

Some of my fondest memories as a child are of visiting my grandparents in both the North of England and the Eastern coastal area of England. Those visits were not only spectacular, times, but they were also accompanied with yummy food. I had one grandmother who could be equated with a British version of Martha Stewart and an additional one grandmother who'd open her handbag which was laden with penguin bars and bar clubs, or an varied range of flavored crisps.

Let me reminisce a small and with that reminiscing share some favorite original British cuisine. I do have to acknowledge, however, that the Brit's cuisine, especially the English dishes, hasn't always had the greatest reputation. Still, they have some of the finest restaurants in the world and with the added diversity in the population, and an increased experimentation with new dishes, the culture has created new culinary styles - curry recipes being one of the most favorite trends right now.

So back to the reminiscing, back to my Martha Stewart nanny. Every morning in her home, on schedule, was a full English breakfast which would regularly consist of sausages, bacon, fried eggs, fried tomatoes, and fried bread or toast. Some would opt for scrambled eggs, or throw in some fried mushrooms, baked beans, and if you were de facto adventurous -- black pudding. Black pudding is a type of blood sausage - something I've never opted for, but others love.


Next would be the original lunch, which is a bit like a Sunday dinner in my home today. Nanny would cook some kind of roast meat - beef, pork or lamb - and with that were her crispy roast potatoes and a fresh orchad vegetable. Steaming windows from boiling cabbage was a base occurrence. The lamb would be complimented with mint sauce, and the beef with gravy and Yorkshire pudding. Yorkshire pudding was always a favorite of mine, a dish made from baked dough - practically like roasted bread.

Tea-time was at once at five o'clock. This was one of my favorite meals: cakes and biscuits, scones and jams. Both my grandmothers regularly had jam tarts (bakewell tarts) pre-made and stowed in their pantries. This consisted of a pastry shell filled with jam and a spongy filling. Shortbread biscuits - melt in your mouth buttery cookies - were always stocked and stored in old Christmas tins. Now remember our cookies are their biscuits, and our biscuits are their scones. To this day, I've never discovered a version of our scones overseas.

Supper-time was just before bed - a quick snack before lights out. My dinner was cheese on toast and hot cocoa.

My other grandmother wasn't as much about order and tradition, but loved filling her cupboards with food her grandchildren loved. She was famous, at least to me, for her sausage pie. And never would a visit go by without at least one trip to the fish and chip shop: Battered and fried cod or plaice with chips (French fries) and regularly sprinkled with salt and lathered with vinegar. Some would opt for the mushy peas on the side which was merely a green soup made from peas.

Let me list briefly some of the most original dishes that I haven't included up to this point.

Roast chicken with chipolata sausages (thin sausages), bread sauce, and cranberry sauce or redcurrant jam. Bangers (sausages) and mash (mashed potatoes). Toad in the hole (sausages cooked in Yorkshire pudding batter), somewhat similar to piggies in a blanket. Shepherd's pie. Traditionally the lowest layer was ground lamb, although in my house we used ground beef, and this was followed with a layer of mashed potatoes. We also regularly put cooked carrots in between the beef and potatoes. There are many variations to this though and also under the names of bungalow pie and fisherman's pie. Steak and kidney pie -- speaks for itself. Lancashire hotpot which was meat, onion and potatoes baked in a pot or casserole dish for a long time on low heat. Cornish pasty. This is a baked pie is smaller determined shape which was traditionally filled with beef, onion, and potato. Kedgeree. This is flaked fish combined with boiled rice, eggs and butter. Smoked haddock was regularly the fish of selection and this dish dates back to the time of the British Indian Empire. Mince (ground beef) and tatties (mashed potatoes). Spotted dick. This is a steamed pudding which contains dried fruit and raisins, and is regularly served with custard.

Picnic Menu and Recipes favorable For Diabetics


Summer Has Arrived! Boy do we know it here in Texas! From the weather maps I have seen, I'm sure many of you are also experiencing some pretty hot summer days. And one of the most favorite of summer activities is a picnic. Picnics for lovers, picnics for families, picnics with friends, work picnics, picnics at the beach, etc. Who doesn't love a picnic?

Diabetics enjoy picnics, too, but they often worry that their dietetic needs won't be met. There's nothing like a diabetic arriving at a picnic to seek a meal full of starches and sweets. And, unfortunately, many hosts feel that to meet the diabetics needs, they must have a second menu or extra dishes for the diabetic. Not only can this make the diabetic feel as if they are creating extra work for their hosts, it naturally isn't necessary. If you are planning a picnic, check out this menu below. It is an easy menu that will cater to the diabetics needs and the rest of the crowd won't even know it. Our menu features Southern Fried Chicken, but you could always pick-up carry-out fried chicken if the picnic isn't at your home or you don't want to spend time frying the chicken yourself. Our Blackberry Twist Lemonade is a great summer beverage. But, again, if convenience is a big issue, pick up some diet sodas and ice them down.

Baby Food Dinners Chicken Gerber

So load up the picnic basket and head out for some worry-free fun with our picnic menu of Southern Fried Chicken, No Mayo Bean Salad, Vegetable Tray, Sand Tarts, and Blackberry Twist Lemonade.


Southern Fried Chicken

2 1/2 lb frying chicken, cut-up

1 cup all-purpose flour

1/2 tsp fresh-ground black pepper

1 tsp salt

1/2 tsp paprika

Wash chicken and pat off excess water. Mix remaining ingredients together and place in a zip-top type plastic bag. In a large skillet, put canola oil to about 1/2-inch depth and heat. Place chicken pieces 1 or 2 at a time into bag with flour mixture. Shake to coat well. Shake off excess flour and add chicken to skillet. Cook chicken over medium heat, turning to brown all sides, for 15 to 20 minutes. Sacrifice heat, cover tightly, simmer 30 to 40 minutes or until tender and cooked through. Take off the lid from skillet the last 10 minutes of cooking to allow chicken to brown. Take off from skillet and drain on paper toweling.

No Mayo Bean Salad

2 cans kidney beans, drained

1/2 cup diced onion

3/4 cup pickle relish

3 hard-boiled eggs, diced

2 tbsp cider vinegar

2 tbsp Splenda

In a medium mixing bowl, consolidate all ingredients. Mix well.

Vegetable Tray

Make a pretty presentation of fresh, colorful vegetables. I recommend baby carrots, sliced cucumbers, tomato wedges, fresh broccoli crowns and olives.

Sand Tarts

1 cup butter, softened

1/4 cup Splenda, granulated

2 cups flour

2 tsp vanilla extract

1 cup chopped pecans

2 tbsp Splenda, granulated

2 tsp cornstarch

Preheat oven to 350 degrees. Beat butter and 1/4 cup Splenda granulated at medium speed with galvanic mixer about 2 minutes until creamy. Moderately add flour, beating at low speed until blended. Stir in vanilla and pecans. Shape into 1-inch balls and place onto cookie sheets. Bake 20 minutes; Take off from oven and place on wire racks to cool.

Process 2 tablespoons Splenda granulated and cornstarch in a blender or food processor. Roll cookie balls in mixture.

Blackberry Twist Lemonade

2 cups fresh blackberries or unsweetened frosty blackberries, thawed

1 cup fresh lemon juice

1 cup Granulated Splenda

4 cups cold water

Put berries, lemon juice, and Splenda into blender. Process aggregate until smooth, scraping down sides. Press aggregate through a sieve into a pitcher. Discard solids remaining in the sieve. Stir in water. Serve over ice. Yield: 7 servings with 4 grams sugar each.
